Step 1
Pre-heat oven to 350 degrees F. Grease a standard size loaf pan and set aside.
Step 2
Peel bananas, add them to a large mixing bowl and mash with a fork. You want to try to mash all the big lumps out. Next, add in the oil, eggs, brown sugar, granulated sugar, vanilla extract and eggnog. Use a whisk to mix everything together. Don’t over mix. You can also use an electric mixer if you like.
Step 3
Next, add in the flour, spices, salt, baking soda and baking powder. Mix everything together completely and then pour batter into the greased loaf pan. Place in the oven and bake until a toothpick inserted comes out clean, 60-70 minutes. It will depend on how well your oven works, mine seemed to take longer than I expected.
Step 4
Remove banana bread from the oven and let sit in the loaf pan for about 10-15 minutes. Next, remove bread from the pan and let cool completely on a cooking rack.
Step 5
Make the eggnog glaze. Add powdered sugar and spices to a medium sized bowl and mix with a fork. Next, add eggnog into the bowl and whisk together. If you like a thick glaze add less eggnog, and more eggnog for a thiner glaze.
Step 6
Wait until the eggnog banana bread has cooled completely and then drizzle the glaze on top. I like to completely cover the top and allow some to drip down the sides. Allow glaze to cool completely so that it hardens. Cut eggnog banana bread and enjoy!
