Step 1
Lay the tortilla on a flat work surface and spread the refried beans just below the center of the tortilla, leave at least 2” of tortilla showing on the right and left of the beans
Step 2
Spread the ingredients on top of the beans in this order: onions, chiles, ¼ cup cheese, chips, sour cream, lettuce, hot sauce, and finally the remaining ¼ cup of cheese
Step 3
To roll, start with the edge nearest to you. Fold it upward over the fillings and use both hands to press it down into a burrito shape. You may end up pulling the fillings back toward you to get a good shape. That’s no problem at all – just be sure you are not pressing things out the sides.
Step 4
Next, lift the right and left (the ‘ends’ of the burrito) and fold them up toward the center of the burrito.
Step 5
Use both hands to hold the sides up and roll everything forward over the rest of the tortilla. With the seam on the bottom, press down gently so the burrito will rest in this position,
Step 6
Melt the butter in a heavy skillet over medium heat. Place the burrito seam-side down in the pan. If necessary, press down gently with a spatula to make sure there is good contact with the pan.
Step 7
Cook 2-3 minutes on each side, until golden and toasted.
Step 8
Optional: when you flip the burrito, place some shredded cheese on top and put a cover over the skillet as the second side toasts.
Step 9
Serve with any of these: sour cream, salsa, cilantro, hot sauce, olives, chopped onion, chopped tomato
