Step 1

Cut the halloumi in to 1cm thick slices. Dry fry in a non-stick frying pan for 1-2 minutes each side.

Step 2

Toast the bread and spread with chutney or hummus. Add the halloumi, peppers, avocado and tomatoes.

Step 3

Add the rocket (arugula) and another slice of toasted bread.
