We have taken the humble sandwich to the next level with this Halloumi and Roasted Red Pepper Sandwich. Kind of like a vegetarian BLT, it is stacked up high with fillings and showing you that a sandwich never needs to be boring.

Halloumi and Roasted Red Pepper Sandwich

wholewheat bread

tbsp tomato chutney

150 g lighter Halloumi

avocado (sliced)

red peppers

sun blushed tomatoes (sliced)

g rocket lettuce

Cut the halloumi in to 1cm thick slices. Dry fry in a non-stick frying pan for 1-2 minutes each side.

Toast the bread and spread with chutney or hummus. Add the halloumi, peppers, avocado and tomatoes.

Add the rocket (arugula) and another slice of toasted bread.

Green Goddess Chicken Salad Sandwiches

plain full-fat (or 2% fat) Greek yogurt

mayonnaise oil

(about 14-16 oz.) shredded rotisserie chicken (or cooked boneless, skinless chicken breasts

Bread, wraps, pita chips, or crackers

To the bowl of a food processor, combine yogurt, mayonnaise, avocado, parsley, dill, tarragon, apple cider vinegar, salt, garlic powder, and black pepper; blend until the mixture is smooth with bright green flecks.

Transfer sauce to a large bowl and add shredded chicken; toss well to combine. Taste and season with a pinch more salt and/or black pepper, if needed. Serve on sandwiches, wraps, with crackers, or over a bed of greens.

So easy to throw together for a weekend lunch and so delicious! I used dave killer seeded bread topped with cucumbers, tomato, sprouts and pepperoncini (left over from making your meatballs!) will make again, thank you!

Already making this for the second time. 10/10 recommend. So flavorful! If possible, tastes even better the second day.

My only regret with this recipe is that I didn’t double it. We omitted the avocado because it wasn’t ripe yet. And added bacon. I’d give this a 10/10.

Holy crap. So good. I didn’t have parsley or tarragon, but I added some green onion in as well as mint with the dill, and it turned out perfect. I added finely chopped celery for crunch and ate it in a wrap. Best chicken salad I’ve had in a while!!

Delicious! Just made this for lunch and my husband and I are licking our fingers this salad is so good. Severed and fresh 7 seed bread with extra avocado slices, spinach and tomatoes. Another home run!

I had to comment here and say I wasn’t expecting much from this recipe as it so easy but I gave it a go as I happened to have the ingredients in my fridge [althouh I substituted basil for cilantro  as that’s all I had]. I’m shocked, it was one of the most deliciously tasty sauces &amp; sandwich fillings I have ever tasted!! I can’t believe how simple and how good it is!!
