Step 1

Preheat oven to 300°F. Line a baking sheet with parchment or a silicone baking mat.

Step 2

In a large bowl, mash the banana. Add oil and vanilla and whisk until combined.

Step 3

Stir in the oats, nuts, cinnamon, nutmeg, and flax until evenly coated.

Step 4

Pour onto prepared baking sheet and press evenly in a single, tight layer with little to no white space.

Step 5

Bake 25-30 minutes without stirring.

Step 6

Remove from oven and let cool before breaking into pieces.
