Step 1

Preheat oven to 360F/180C.

Step 2

In a small bowl, combine lemon pepper (see recipe in notes section), garlic powder (if using) and salt. Set aside.

Step 3

Place chicken breasts in a baking dish. Rub with olive oil all over and drizzle with lemon juice.

Step 4

Rub chicken on all sides with the lemon pepper mixture.

Step 5

Bake for 25-30 minutes or until chicken is not longer pink inside but still tender.

Step 6

Spoon sauce over chicken and serve with fresh chopped parsley and lemon wedges, if desired. Side ideas: green beans or asparagus + mashed potatoes/cauliflower to soak up the sauce.
