Homemade Buttermilk

Place the vinegar in a glass-measuring cup, and add enough milk to make 1 cup total liquid. Stir to combine and let stand for 10 to 15 minutes (The mixture will begin to curdle).

Use as needed in a recipe, or cover and refrigerate until needed.

Need more information. After it curdles, do you mix it all an reincorporate it or do you separate if from the watery part and toss the watery part and mix the curdles?

This works in a serious pinch, but REAL buttermilk is just as easy! 2 pints of heavy whipping cream. Whip until butter fat separates from the liquid (about 10 minutes). Drain the liquid. THAT'S BUTTERMILK! Add a little salt to the solid and mix. It's real, homemade butter! Just look up a recipe to make homemade butter. So easy and you get no curdled milk or sour taste like you do with the substitute recipe.

I made this following the recipe but for 2 cups buttermilk so I doubled the lemon juice and poured the milk to meet two cups. After 20 minutes it started to thicken and curdle just slightly. I tasted it, yikes! It doesn't taste anything like buttermilk. It tastes like very lemony milk. I was not willing to use this in my recipe so I wasted 3 lemons and two cups of milk! Maybe vinegar would be better but I wasn't willing to try.

Perfect for my pancake recipe without needing the special purchase of buttermilk.

I didn't know that you could make your own! Was thrilled to see this and now I am not spending money on buttermilk at the store, which is way outside my budget. My pancakes are happy lil' things now!
