Step 1
Line an 8×8 inch baking dish with parchment paper and set aside.
Step 2
Pour the crispy rice cereal into a large mixing bowl.
Step 3
In a separate bowl, mix the chocolate chips, peanut butter and coconut oil together. Microwave for 2-3 minutes or until the chocolate melts. Check frequently to ensure the chocolate doesn’t burn.
Step 4
Pour the melted chocolate mixture over the cereal and mix until the cereal is coated.
Step 5
Pour the crunch bar mixture over the parchment lined dish and spread evenly over the bottom of the pan.
Step 6
Refrigerate for 2-3 hours or until the candy bars are set. Cut the bars into even squares and serve immediately.
Step 7
Store leftover bars in an airtight container in the refrigerator. The bars will melt at room temperature, so keep the cold until you serve them.
