Homemade Crunch Bars

crispy rice cereal

chocolate chips, semi-sweet chocolate, or dark chocolate chips

peanut butter

coconut oil

Line an 8&#215;8 inch baking dish with parchment paper and set aside.

Pour the crispy rice cereal into a large mixing bowl.

In a separate bowl, mix the chocolate chips, peanut butter and coconut oil together. Microwave for 2-3 minutes or until the chocolate melts. Check frequently to ensure the chocolate doesn&#8217;t burn.

Pour the melted chocolate mixture over the cereal and mix until the cereal is coated.

Pour the crunch bar mixture over the parchment lined dish and spread evenly over the bottom of the pan.

Refrigerate for 2-3 hours or until the candy bars are set. Cut the bars into even squares and serve immediately.

Store leftover bars in an airtight container in the refrigerator. The bars will melt at room temperature, so keep the cold until you serve them.

crispy protein cereal ((I used the cocoa cereal))

Line an 8x8 baking pan with parchment or waxed paper, with overhanging sides for easy removal.

Place the protein cereal in a re-sealable bag. Use a kitchen mallet or a rolling pin to break up the cereal into smaller pieces. (You don&#39;t have to hit it hard, it breaks up easily).

In a heatproof bowl set over a bowl of barely simmering water, combine the peanut butter, unsweetened chocolate, and oil, stirring until smooth and melted.
