In a large bowl, combine the flour and salt, then create a well/hole in the center;

Using a separate small bowl, beat the eggs until well combined;
Step 3
Pour the eggs, milk, and butter into the well of the flour;
Step 4
Mix this together until it forms a smooth dough;
Step 5
Next, wrap the dough in plastic wrap and set aside to rest;
Step 6
Once 15 minutes rest time is over, unwrap and roll the dough out to 1/8" thickness;

Slice the dough into strips 1/4" wide and 3-4" long;
Step 8
Using 1/4 cup flour, dust the noodles and toss to coat;
Step 9
Drop noodles into boiling salted water and cook for 3-4 minutes or until the noodles begin floating to the top of the water;
Step 10
Drain and add butter, salt, pepper, and any additional herbs and spices as desired before serving.
