Preheat the oven to 400°F.
Press crust dough (just one of them!) into the pie dish.
Layer the apples inside the pie crust.
Sprinkle the brown sugar and the cinnamon on top of the apples. Gently stir to spread the coating around a little bit.
Drizzle the honey over the apples.
Cut the second pie crust into strips. Weave the strips over and under to create a lattice top.
Whisk together the egg yolk and water. Brush the egg wash over the lattice crust and sprinkle with coarse sugar.
Place the pie dish on a baking sheet and bake at 400°F for 15 minutes. Then lower the heat to 350°F and bake for 45-50 minutes.
Let the pie cool for at least 3 hours. The filling will thicken as it cools.
