Step 1
Make the cake: Preheat oven to 350°F. Grease then flour three 8-inch cake pans. Whisk together flour, sugar, baking powder, cinnamon, and kosher salt in a bowl. Add eggs, vanilla, oil, milk, and mashed banana and whisk to combine, scraping down the sides of the bowl as necessary. Stir in pecans and pineapple.
Step 2
Transfer batter to prepared pans, dividing evenly. Bake until a toothpick inserted into the center of each cake layer comes out clean, 28 to 30 minutes. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 3
Make the frosting: Beat cream cheese and butter with an electric mixer on medium speed until light and creamy, 1 to 2 minutes. Beat in vanilla. Slowly beat in confectioners’ sugar until combined, 1 to 2 minutes.
