Step 1
Make the syrup. Whisk together the water, sugar, honey, and lavender in a small pot. Bring the syrup to a simmer and simmer 5 minutes, dissolving the sugar. Remove from the heat and let the lavender steep in the syrup for about 30 minutes. Strain the lavender through a fine mesh strainer and let the syrup cool. Store the syrup in a clean mason jar in the refrigerator. The syrup will keep several weeks.
Step 2
For the lattes, blend the matcha powder, milk, and lavender honey in a high-speed blender until combined. Pour over ice, and enjoy!
