Step 1
Turn Instant Pot to saute setting. When display says HOT add in the bacon and fry until crisp. Use a slotted spoon to move the bacon to a paper towel lined plate. Discard all but 1 Tbsp of the bacon grease.
Step 2
Add in the shallot and saute for 3 minutes. Add in the garlic and saute for 30 seconds.
Step 3
Pour water into pot and scrape bottom of pot so nothing is sticking.
Step 4
Add in chicken base, tortellini, salt, pepper, Italian seasoning and chicken.
Step 5
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.
Step 6
Stir in the sun-dried tomatoes, parmesan and cream. Finally stir in the bacon.
Step 7
Scoop onto plates and enjoy!
