Step 1

Preheat oven to 400 degrees Fahrenheit.

Step 2

Combine ground beef, garlic powder, egg and breadcrumbs in a large mixing bowl. Add salt and pepper, as desired.

Step 3

Use a medium scoop (or tablespoon) to scoop the meat into balls. Makes approximately 12 medium or 24 miniature meatballs.

Step 4

Arrange meatballs on a large baking sheet.

Step 5

Bake for 15 minutes. Remove from the oven and allow the meatballs to rest while preparing the vegetables.

Step 6

Pour 2 tablespoons of olive oil into a large stew pot or dutch oven. Heat on medium temperature.

Step 7

Place diced potatoes into the hot oil and saute for 5 minutes, stirring constantly.

Step 8

Add green beans, corn and carrots to the potatoes. Sprinkle in additional salt and pepper, as desired.

Step 9

Continue cooking for 3 to 5 minutes or until vegetables are just soft.

Step 10

Pour diced tomatoes and Guinness beer into the vegetables.

Step 11

Add meatballs to the pot and stir to combine.

Step 12

Turn stove temperature down to low and continue cooking for 30 to 40 minutes.

Step 13

Serve warm with fresh homemade bread.
