Step 1

Slice the onion and bell peppers, then open the can of diced fire-roasted tomatoes.

Step 2

In a large pan or skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is hot, add the Italian sausages to the skillet.

Step 3

Brown them on all sides for about 5-8 minutes. Remove the sausages from the skillet and set them aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil and the sliced onions and bell peppers. Season the vegetables with salt and pepper to taste. Stir and cook over medium heat until they begin to soften, about 5-7 minutes.

Step 5

Add minced garlic and Italian seasoning to the vegetables. Stir well to incorporate the seasoning.

Step 6

Pour in the diced fire-roasted tomatoes and stir to combine. Simmer the mixture uncovered for 5 minutes to allow flavors to meld together. If you prefer a saucier consistency, add about 1/4-1/2 cup of water.

Step 7

Return the browned sausages to the skillet, placing them on top of the vegetable mixture.

Step 8

Cover the skillet and continue cooking over medium heat for 10-15 minutes, or until the sausages are fully cooked through and reach an internal temperature of 160°F (71°C), and the vegetables are tender to your liking.

Step 9

Serve the sausage, peppers, and onions hot on their own, in hotdog buns, or over pasta, or rice for a complete meal!
