Step 1

Using a strainer or colander, rinse the rice under cold, running water, then drain and transfer to a medium saucepan. Add water and bring the mixture to a boil over high heat.

Step 2

Once the liquid comes to a boil, stir the mixture, cover the saucepan, and reduce heat to low. Cook rice until liquid is fully absorbed, 15-18 minutes. Once done, remove rice from the heat and let it stand, still covered, for 5 minutes.

Meanwhile, wash and dry the fresh produce.

Step 4

Seed and slice bell peppers into thin strips. Transfer to a medium bowl.

Step 5

Halve jalapeño peppers lengthwise; seed and remove ribs with a spoon. Thinly slice and add to the bowl with the bell peppers. (Be careful with jalapeños; do not touch your eyes and ensure you wash your hands after handling or wear gloves while preparing.)

Step 6

Peel and mince garlic. Peel, halve, and thinly slice onion into half moons; add both to the bowl with the peppers.

Step 7

Preheat a large skillet over medium-high heat.

Step 8

Once the skillet is hot, add oil, and swirl to coat the bottom. Add the veggies and spices; cook, stirring occasionally, until soft and browned, about 10 minutes.

Step 9

While the veggies are cooking, slice the sausages into 1-inch pieces.

Step 10

Stir sausage into the skillet and continue to cook until golden brown and heated through, about 5 minutes (or cook sausages according to package instructions). Remove from heat.

Step 11

To serve, divide rice and sausage-pepper skillet between plates. Enjoy!
