Step 1
Preheat oven to 180ºC. Line an oven tray with baking paper.
Step 2
Season pumpkin mash to taste and cool.
Step 3
Cut a mouth shape from each piece of capsicum. Slice one side off zucchini. Cut this piece into 12 small triangles.
Step 4
Place bases on tray. Spread each with pumpkin mash. Sprinkle each evenly with cheese. Arrange triangles, skin side up, on each to form two eyes and a nose. Place capsicum along the bottom for the mouth.
Step 5
Bake 10-15 minutes, until golden and crisp. Serve with drink of choice.
