Back in 2013 Joaquín Simó (of Death &amp; Co., NY) was handed a bottle of Smith &amp; Cross overproof Jamaican rum and his first instinct was to stir it down in a Negroni in place of gin.Smith &amp; Cross is a pot-stilled Jamaican rum with a high ester count - it smells of funky, overripe tropical fruit, banana bread and spice. You can try using an alternate rum but a funky pot-distilled Jamaican overproof is preferred.

Kingston Negroni Recipe

ml Overproof Jamaican Rum (preferably Smith & Cross)

ml Sweet Vermouth (preferably Carpano Antica)

ml Campari

Combine the 3 ingredients to your mixing glass

Stir with ice for 20-30 seconds

Strain over ice into a double old fashioned glass

Garnish with a twist of orange
