Step 1

Preheat the oven to 350 degrees F. Grease a 9 x 13-inch baking dish with cooking spray.

In a large bowl, combine the cake mix, melted butter, eggs, salt, and vanilla. Gently stir in the peaches, and coconut until combined. Pour into the greased baking dish.

Bake the cake for 45 to 50 minutes, or until a knife or toothpick inserted in the center comes out clean. Cool the cake completely before frosting, about an hour or more.

Step 4

For the frosting:In a large mixing bowl or the bowl of a stand mixer, combine the cream cheese, softened butter, vanilla, and salt. Whip until combined and fluffy, about 2 minutes. Slowly add in the powdered sugar until it reaches your desired consistency.
