Step 1
Preheat oven to 200C/180C fan forced. Grease a small 21 x 26cm oven tray. Lay a sheet of mountain bread on the tray and brush with melted butter. Lay another sheet on top and brush with butter.
Step 2
Use a fork to mash the ricotta and garlic together until well combined. Season. Scatter over the bread. Crumble over the feta and sprinkle with the spinach and half the mozzarella.
Step 3
Top with the final sheet of bread and press down firmly. Brush with butter. Bake for 10 minutes. Sprinkle with the remaining mozzarella and bake for a further 15 minutes or until the cheese is golden and the bread is crisp. Cool slightly, before cutting into squares to serve. Sprinkle with sumac and thyme, if using.
