Place pasta in a 4L (16 cup) baking dish. Pour over canned tomatoes and scatter over the onions and sundried tomatoes. Pour over boiling stock and cream and spoon over mascarpone. Stir to combine. Cover with foil. Bake for 30 minutes or until pasta is al dente.

Step 3

Remove foil and scatter over spinach, chicken and half of the cheese, tossing to combine. Sprinkle over remaining cheese. Bake for a further 15-20 minutes or until golden.

Roasted cauliflower and kumara tray bake with pomegranate dressing

½ medium head cauliflower,

kumara,

carrot,

silver beet leaves

spray oil

smoked paprika

lamb loin chops

low-fat plain yoghurt

fresh coriander, to garnish (optional)

extra virgin olive oil

1 Preheat oven to 200°C. Line a large baking tray with baking paper. On lined tray, spread out vegetables. Spray with oil and sprinkle with smoked paprika. Add lamb chops to tray and place in the oven for 15-20 minutes, until vegetables are tender.

2 In a jar, combine dressing ingredients and shake to mix well.

3 Serve lamb and vegetables drizzled with dressing and yoghurt and garnished with coriander, if desired.
