Step 1
PREP: Line a small baking sheet with parchment paper. Wash and zest the peel of your lemon. Slice lemon in half, then juice. Measure out 1 Tbsp of zest and 3 Tbsp of juice and set aside. Melt coconut oil in a small ramekin in the microwave.
Step 2
Add all ingredients to a large food processor. Pulse until a mixture forms - it should resemble the consistency of cookie dough.
Step 3
Scoop a small amount of the mixture into your hands and roll into balls.
Step 4
If you'd like to coat the balls with coconut, place more desiccated coconut in a small plate. Roll each ball until covered in coconut.
Step 5
Place balls onto lined baking sheet and repeat until all mixture is used up. Depending on the size, this recipe as written will make about 12 balls.
Step 6
Place balls in the freezer for about 1 hour to firm up. See notes for additional storage tips!
