Step 1
Preheat oven to 350° F. Line a baking sheet with parchment paper.

Put 2 1/2c. rice puffs in a medium size mixing bowl.
Step 3
Combine oil, syrup, and honey in a liquid measuring cup. Whisk together. Microwave for 30 seconds & whisk vigorously. Then microwave for another 10-30 seconds. It may get to a low boil in the microwave.
Step 4
Whisk liquid again then pour over rice puffs. Stir to coat evenly.
Step 5
Chop the pistachios, then add them and the ground flaxseed meal to the rice puffs. Stir to coat evenly.
Step 6
Spread the "granola" on the baking sheet, then bake for 6 min. NOTE: these rice puffs cook quickly, watch carefully so they don't burn!Take out and cool for 15 min before eating. Store in the fridge for a couple days or in the freezer.
