Step 1
Heat the oven to 300°F. Line a baking sheet with parchment paper.
Step 2
Mix the gluten-free oats, cashews, flaxseed meal, chia seeds, and salt in a large bowl . Whisk them together until everything is well-mixed. Pour in the olive oil and maple syrup and stir everything together until the oats, cashews and seeds are evenly coated.
Step 3
Spread the granola evenly onto the baking sheet. Bake for 15 minutes, then stir the granola up on the baking sheet. Continue baking until the cashews are browning, another 15 to 20 minutes. At this point, your granola won’t be as crisp as you want yet, but don’t worry it will finish cooking as it cools. If you cook your granola longer, it will end up being too crisp or burned.
Step 4
Remove your granola from the oven and let it cool completely on the baking sheet. Store in an airtight container for up to 2 weeks.
