Step 1

Preheat the oven to 350 degrees. Line a 9x13 baking pan with parchment paper, with extra paper lined up on the edges of the pan (this will allow you to remove from the pan easily after baking).

Step 2

In a stand mixer cream together the butter and sugars until creamy. Add in the eggs one at time, along with the salt and vanilla.

Step 3

Sift together the dry ingredients and add into the wet ingredients until just combined. Gently spread half of this batter into the bottom of the parchment lined pan. Grease your fingers to spread easier.

Step 4

In a small saucepan, heat all of the apple filling ingredients to medium heat. Cook for 4-5 minutes or until just soft, stirring often. Remove from the heat and allow to cool for 5 minutes. Then lay the spiced apples onto the blondie batter.

Step 5

Using your fingers drop the remaining blondie batter on top of the apples. It will not cover it completely. Bake the bars for 25-30 minutes or until golden brown and puffy. Allow the bars to cool slightly.

Step 6

For the glaze, put all of the ingredient minus the powdered sugar into a small saucepan and whisk to combine over low heat. Once incorporated, remove from the heat and add in the powdered sugar, continuing to whisk until smooth. Let this sit and thicken for 5 minutes and then pour over the bars, spreading evenly.

Step 7

Allow the glaze to harden over the bars, about 30 minutes before cutting into bars. Keep in an airtight container for freshness. They can also be kept in the fridge for a cold treat!
