Step 1
In a medium bowl, combine the flour, salt, and baking soda. Set aside.

In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs and vanilla and beat until combined.

Gradually add in the flour mixture to the butter mixture and beat until well combined. A smooth dough should start to form.
Step 4
Divide the dough into three portions. Mix a few drops of yellow gel food coloring into one portion, a few drops of red gel food coloring into the second portion, and the black cocoa powder into the third portion.
Step 5
Place a piece of wax paper onto a flat work surface. Pinch off pieces of the different colored doughs and gently press them onto the wax paper next to each other to make a marble effect. Transfer the dough (with the wax paper) to a baking sheet. Place a second piece of wax paper over the top and chill in the refrigerator for 30 minutes.
Step 6
Preheat the oven to 350 F and line two baking sheets with parchment paper.
Step 7
Transfer the dough to a lightly floured surface and gently roll it out to ½ inch thickness. Use the Mickey Mouse cookie cutter to cut the cookies into Mickey shapes. If needed, press the leftover back together to create a new marble pattern and gently re-roll it.
Step 8
Place the cookies on the prepared baking sheet and chill in the refrigerator for 15 minutes.
Step 9
Bake the cookies for 8-10 minutes or until the edges of the cookies are just starting to brown. Let the cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
