Step 1
Dry the mozzarella balls well on a paper towel and cut each in half, so you have 4 small domes.
Step 2
Cut the bread slices into discs using a pastry cutter (diam. 2 1/2"); use the same pastry cutter to trim the mozzarella.
Step 3
Heat the peanut oil in a fry pan to 350°F.
Step 4
Beat the eggs, adding a pinch of salt. Place breadcrumbs in a shallow bowl.
Step 5
Put 1 basil leaf on each bread slice, then place the mozzarella domes on top, flat side down. Bread the mozzarella. Fry the mozzarella in carrozza, one at a time for a couple of minutes until golden. Drain on paper towels.
Step 6
Cut up the peaches and tomatoes and dress with extra-virgin olive oil, vinegar, salt and torn basil leaves. Serve the mozzarella in carrozza with the tomatoes and peaches on the side.
