Gather the ingredients for your Nigerian fried rice.

Wash your parboiled rice and transfer it to a pot.

Add the chicken stock and seasonings. Stir.

Cover and cook the rice for about 25 minutes or until it absorbs the liquid.

Turn off the heat, but keep the lid on. After about 5 minutes, fluff the cooked rice.

For the veggies, heat the cooking oil in a skillet.

Saute the onions, then add the habanero pepper. Stir in the mixed vegetables and chopped liver after a minute.

Season the mixed veggies and fry them until dry and slightly crispy.
