In Central and Western Africa, Fufu is any variety of starchy food that has been mashed and shaped into balls and eaten as a staple. It is one of our favorite Nigerian Food and can be made with yam, cassava or other ground provisions.

Rinse the cassava and plantains with cold water. Peel the skin and cut them into chunks.

In a large pot add water and bring it to boil.

Add cassava and plantain pieces, and boil them for about 15-20 minutes until they’re soft. Test by piercing with a fork after 15 minutes.

Transfer the pieces to a food processor or blender using a slotted spoon.

Pulse to blend, adding water GRADUALLY, until it reaches your desired consistency. It’s important to add small amount of water each time.

Transfer the mixture into a bowl. Season with salt and pepper to taste.

Place a piece of plastic wrap on the counter, and take about 2 spoons of the mixture to the middle of the wrap. Shape it into balls. Repeat with the rest of the dough. You’ll get about 8-10 fufu balls. Serve them with stew or soup.

Chin Chin is a popular West African treat, which is delightfully crunchy, sweet, and addictive. Made with just a handful of pantry staple ingredients, this deep-fried pastry snack will have your kitchen smelling heavenly even before you are done frying! No matter if you prefer your Chin Chin deep-fried, baked or air-fried, they are guaranteed to satisfy your sweet tooth and leave you feeling satisfied.

Chin Chin Recipe

Cups Flour

Baking powder

Salt

Sugar

tsp Grated nutmeg

Milk

tsp Vanilla (optional)

¼ Cup Melted butter

First, mix all dry ingredients together: flour, baking powder, salt, sugar, and nutmeg.

Then in a separate bowl, mix milk, butter, egg and vanilla extract and put it aside.

Then add the milk, egg, vanilla liquid mixture into the dry ingredients. Mix it well and form a ball.

Keep kneading the dough on a floured surface until the dough is smooth.

Leave it covered for up to 10 minutes and heat up the oil.

Cut the dough on a floured board in half. There are many different ways how to cut Chin-Chin. Choose the shape and size you like the most. 

Next, roll each half about 1/6 to 1/5 inches thick and start to cut the desired shape. Use a pizza knife to get the best result or a sharp knife.

Put the pieces into the hot oil. While frying, continuously stir until they get a golden brown look.

Remove from the oil and place on paper towels.

Easier, healthier, and irresistibly delicious Nigerian fried rice recipe. This fried rice recipe is gluten-free and dairy-free, and you can effortlessly make it vegan fried rice if you so wish by cooking the rice in vegetable broth instead of chicken broth. Packed with assorted nutritious veggies, this vegetable fried is a must-try! Here I served it with oven-baked chicken thigh, you can serve it with any choice of protein.

Nigerian Fried Rice Recipe with Baked Chicken

chicken broth chicken broth)

bare leaves (for boiling the rice)

Mint Leaves (optional; for garnishing)

Parsley (sliced; for garnishing)

Wash and cut all the vegetables. Cover and set aside.

In a clean pot, add the broth or stock, usually at a ratio of 1 cup of rice to 2 cups of broth. Also, add bare leaves and 1-2 teaspoons of curry.

Add washed rice when the broth starts boiling. Usually, the broth is salted, so I do not add additional salt.

Cook for about 20 – 25 minutes or until rice is more than halfway cooked (about 75% cooked) and all liquid absorbed (please see the video). Turn off and set the rice aside. I would normally cook the rice for about 25 minutes or so, depending on the quantity.

Then in a clean pan, start by frying the vegetables and slowly adding rice to about one cup at a time. Do not overcrowd the pan—just bit by bit. To explain this: set a clean pan on the stove, add oil, then add onion/garlic as it heats up. Cook for 1 – 2 minutes, add bell peppers, cook another 2 minutes, and add mixed vegetables. Season with a little salt, curry, seasoning cube, or powder, and then add the already cooked rice—Fry to your desired consistency. Watch the video if you need more clarification.

Taste and adjust, repeat to fry all the rice. Garnish with parsley and mint leaves. Serve warm with baked chicken thighs.
