Step 1

Remove the stones from the medjool dates and soak them in warm water for around 30 - 40 mins.

Step 2

Place the desiccated coconut and nuts in a food processor with the ginger powder, flour, cinnamon, salt and nutmeg and blitz until the nuts are chopped into small pieces.

Step 3

Add coconut oil, medjool dates with with 1 tbs of the soaked date water to the nut mixture. Blend again on high speed until the ingredients start to stick together.

Step 4

Add the grated carrots and blitz until mixed well.

Step 5

Scoop a tsp of the mixture and roll into bite-sized balls.
