Step 1
Mix all of the marinade items together to form a paste. Cover your chicken and leave to marinade for 1-2 hours minimum.
Step 2
Preheat the over to 200C. Load the potatoes & chicken onto a tray, making sure all the marinade goes with it.
Step 3
Mix together and roast for 40 minutes until chicken has nice browned.
Step 4
Now remove the tin and add the peppers, tomatoes & corn.
Step 5
Return to the oven and roast for another 20 minutes.
Step 6
Remove from the oven and let cool for 10 mins.
Step 7
Serve with a cabbage slaw, rice & fresh coriander.
