This peri peri chicken recipe smothers chicken in a homemade peri peri sauce then bakes or grills them and serves them with extra sauce. It&#x27;s a quick and easy weeknight meal. 

Peri Peri Chicken Recipe

Pat the chicken legs dry and rub them down with the paprika, garlic, and salt and pepper. Cover and set aside.

Heat your oven to 400 degrees F.

For the peri peri sauce, add the peppers, garlic, paprika, cilantro and basil to a food processor. Process until well mixed.

Drizzle in the olive oil while continuing to process until the mixture thickens up.

Stir in the lemon juice and adjust for salt.

Use half of the peri peri sauce to cover the chicken. Toss them together to get the chicken legs nicely coated. You can cover and refrigerate for at least 1 hour at this point if you’d like more developed flavor.

FOR BAKING: Bake the chicken for 35-40 minutes, or until they are nicely cooked through. They should measure 165 degrees F internally.

FOR GRILLING: Fire up the grill to medium heat and lightly oil the grates. Grill the chicken legs for about 35-40 minutes, turning them every 5 minutes to keep from burning, until they are cooked through. They should measure 165 degrees F internally.

Remove from the oven and toss in the remaining peri peri sauce.

Sprinkle with fresh herbs and spicy chili flakes. Serve!

Combine all the marinade ingredients and mix well.

Spread over the chicken on both sides and allow to marinade for up to 24 hours but at least 1 hour.

Grill in a hot griddle pan with the lemon halves (alternatively cook the chicken on a barbecue) for 7-10 minutes per side then transfer to the oven (pre-heated to 180ºc) and cook for a further 20 minutes or until the chicken is cooked through.

Squeeze over the grilled lemon juice and serve.

Start by creating a few random cuts into your chicken, through the skin.

Then add the peri peri sauce, lime juice, salt and black pepper to the chicken and use your hands to marinate and massage the sauce into the chicken.

Leave the Chicken to marinate for as long as possible. If you are in a hurry, keep minimum 2-3 hours to marinate. Best is to keep over night and day.

When you are ready to cook the chicken, preheat your oven to 180 Celsius/ 350 Fahrenheit.

Place the meat into a ceramic baking dish and cover the chicken with the marination. Then sprinkle some olive oil over the chicken.

Roast your chicken for about 30-35 minutes or until the thermometer shows 75 Celsius/ about 170 Fahrenheit. While the chicken is roasting, make sure to baste the meat with olive oil frequently, so that the meat remains nice and juice. I usually like to use the oil and marination mixture which turns into a sauce at the foot of the chicken, to cover my chicken with moisture.

After you have roasted the chicken, keep the peri peri chicken for another 5-8 minutes in the grilled mode in your oven. That way you will get a lovely crust on top of your chicken.

How to make easy Peri Peri Chicken at home!

A low-fat spicy chicken one-pot with peppers, tomatoes and fresh red chillies - three of your five-a-day

Peri-peri chicken pilaf

pack of 6 skinless boneless chicken thighs

tbsp peri-peri seasoning

Heat the oil in a large pan over a medium heat. Rub the chicken with 1 tbsp of the peri-peri and brown in the pan for 1 min each side until golden. Transfer to a plate and set aside.

Add the onion to the pan and cook on a gentle heat for 8-10 mins until soft. Add the garlic and remaining peri-peri, and give everything a stir. Tip in the rice and stir to coat.

Add the stock and return the chicken to the pan. Add the peppers and cover with a lid, then simmer gently for 25 mins until cooked. About 5 mins before the end of cooking, add the tomatoes.

Stir through the parsley, scatter over the chillies (if you like it spicy) and serve with lemon wedges.

Easy Peri Peri Shrimp

Heat a skillet over medium-high heat. Add butter and oil. When the butter is melted add pepper and cook for 2-3 minutes or until slightly soft. Add garlic and sauté until fragrant (about 30 seconds - 1 minute). Then add paprika, oregano and ground peri-peri; mix to combine.

Add the shrimp, season with salt and pepper and sauté for 1-2 minutes on one side (until just beginning to turn pink and opaque), then flip and cook the other side.

Pour lemon juice, honey and zest; mix to incorporate. Bring to a simmer for 1-2 minutes. Note: don't overcook your shrimp or they will turn rubbery.

Sprinkle with fresh parsley and take off the heat immediately.

Serve over polenta, pasta, rice, steamed vegetables.

Preheat your oven to 220C / 200C / gas mark 7 / 425F.

Mix together all the ingredients – except the sweet potato cubes – in a large bowl.

Add the cubes of sweet potato and stir to coat thoroughly. (Or use your hands!)

Place the sweet potato cubes on a large non-stick baking tray, ensuring the cubes are well spread out (use 2 baking sheets if necessary) and in a single layer.

Roast in the oven for 20 minutes, turning once. (Test one to ensure it’s cooked all the way through before removing the cubes from the oven.)

Mix together all of the Peri Peri marinade ingredients (i.e. all the ingredients apart from the actual chicken!) in a large bowl. Place the chicken in the bowl, turning to coat each piece of chicken with marinade. (You can do this in a ziplock bag if you don’t like getting your hands messy!)

Cover and marinate the chicken for 2 hours in the fridge or up to 24 hours if you have the time. Alternatively, just continue with the recipe.
