Step 1

Heat olive oil in a large skillet

Step 2

Dredge chicken thighs in taco seasoning mixed with smoked paprika

Step 3

Fry thighs in skillet for 3 minutes on each side until browned - remove from pan and place on a plate

Add peppers and onions to the pan and cook for two minutes

Step 5

Add orzo and cook for one minute

Step 6

Add black beans, Lovejoy's Bloody Mary Mix (or tomatoes), and stock

Step 7

Nestle chicken breasts back in the pan and bring mixture to a bowl

Step 8

Once boiling, turn the heat to medium-high, cover the pan, and cook for 20 minutes until most of the liquid evaporates and the chicken is cooked through.

Step 9

Garnish with avocado, sour cream, cilantro, and tortilla chips.
