Step 1
Rub the chickpeas in a clean dishtowel to dry them.
Step 2
Toss chickpeas with 1 Tablespoon oil and then with the paprika, chili powder, sugar, salt, and pepper.
Step 3
Pour remaining oil into a large skillet (it should create a thin layer across the entire pan). Place the pan over medium-high heat until the oil begins to shimmer. Carefully add the chickpeas to the oil and sauté until golden brown, 5 to 7 minutes. (Be careful as the chickpeas heat up - they will pop and sizzle.)
Step 4
Use a slotted spoon to transfer the chickpeas to a paper towel-lined plate.
Step 5
Allow chickpeas to cool slightly and then top with lime juice and zest.
