Mac & Cheese Bombs Are A Handheld Delight

Polenta fries are so easy to make in the air fryer. Simply cut prepared polenta into sticks, season with spices, and air fry until crisp. Serve with warmed marinara or your favorite dipping sauce.

Remove polenta from plastic tube. If it&#39;s damp, gently dry it off with a clean kitchen towel.

Now its time to cut the polenta into fries. (See the blog post for detailed pictures showing how to do it.) Start by laying the polenta log on its side on a cutting board. Cut it in half. Then stand those halves on their ends, cut side down. Cut them in half straight down the middle. Then cut each half into halves. Now you should have 8 flat slabs total. Lay the slabs flat, and cut them into fry-shaped sticks (4 sticks per slab).

Put the polenta fries into a large mixing bowl. Spray with oil. Then sprinkle on dried basil, dried oregano (or dried parsley), granulated garlic, a dash of salt, and a dash of pepper. Use your hands to carefully toss the polenta fries in the spices, so that they&#39;re evenly coated. Be gentle, so that they don&#39;t break. Give another spray of oil, if you like.

Place about half of the seasoned polenta fries into the air fryer basket. (Be careful not to overcrowd, or they won&#39;t brown as nicely. You&#39;ll likely need to cook in batches.)Air fry at 400 degrees for 10 minutes, or until they are starting to look brown &amp; crispy around the edges. Carefully flip with a spatula. Air fry at 400 degrees for 2 to 4 more minutes, until they are browned &amp; crisp all over.

Remove the polenta fries from the air fryer basket &amp; put on a serving plate. Cook the remaining polenta fries in the same fashion. Be aware that they may cook slightly faster since the air fryer is now hot.

Serve polenta fries with warmed marinara or your favorite dipping sauces like vegan ranch dressing, barbecue sauce, hot sauce, or ketchup.

Pan-fried chickpeas that are crisp on the outside and creamy inside are great on their own as a snack, or topped with yogurt as a vegetarian side dish.

Pan-Fried Crispy Chickpeas with Lime

(15-oz) can Chickpeas (drained and rinsed)

tsp Smoked Paprika

tsp Chili Powder

tsp Granulated Sugar

tsp Black Pepper

Zest and Juice from 1/2 Lime

Rub the chickpeas in a clean dishtowel to dry them.

Toss chickpeas with 1 Tablespoon oil and then with the paprika, chili powder, sugar, salt, and pepper.

Pour remaining oil into a large skillet (it should create a thin layer across the entire pan). Place the pan over medium-high heat until the oil begins to shimmer. Carefully add the chickpeas to the oil and sauté until golden brown, 5 to 7 minutes. (Be careful as the chickpeas heat up - they will pop and sizzle.)

Use a slotted spoon to transfer the chickpeas to a paper towel-lined plate.

Allow chickpeas to cool slightly and then top with lime juice and zest.

Unroll the pizza dough onto a cutting board and press into approximately a 13&#215;18-inch rectangle. Top with ham and cheese slices. Starting on the longer side of the rectangle, roll up the edge tightly. When you reach the end, pinch the seam together and flip the roll so that the seam is face down. Cut into 12 slices, approximately 1-inch wide. Arrange in prepared baking dish.

Next combine the butter, brown sugar, Worcestershire sauce, mustard, and poppy seeds in a sauce pan over medium heat. Whisk until the butter is melted and the glaze is smooth and combined. Pour evenly over the rolls.

I stand corrected -  I am the person that wrote the negative review above not knowing how to delete it,  I wanted to make sure  everyone saw this  additional feedback.   After making this recipe,  even though I hated it and planned on throwing them out,  they were tossed in the refrig.   Long story short,  they ended up being served - COLD!     Four different people came up to me asking for the recipe!    The "mixture"   (mustard, brown sugar, butter and worcestershire  ) needs to be poured over the top - equally --- so every roll is properly covered  is the key.   Quick, easy,  can be made the day before and served cold.... a good recipe to have!

Dang! Mine came out looking so fancy! Tastes amazing to, that sauce is magic! No notes, just a new family favorite!

Air Fryer Popcorn

Preheat air fryer to 400° Fahrenheit.

Line air fryer basket with foil in shape of basket or bowl.

Toss popcorn kernels with ¼ tablespoon oil. Arrange in single layer on top of foil.

Do you like boxed mac and cheese or homemade?

Prepare macaroni and cheese according to package instructions. While the macaroni and cheese is still hot, stir in cheddar, Monterey Jack and cayenne until the cheese is completely melted. Transfer mac and cheese to a large bowl, then cover with plastic wrap and refrigerate until firm, about 3 hours.

Set up a dredging station: In a small shallow bowl, season flour with salt and pepper. In a second shallow bowl, whisk together eggs and milk. Place bread crumbs in a third bowl.

Using a small cookie scoop, scoop small balls of mac and cheese.  Toss each ball in seasoned flour, dunk in the egg mixture to coat, then dredge in bread crumbs. Refrigerate until ready to fry.

In a large heavy pot, heat about 1" vegetable oil over medium heat. Meanwhile, place a wire rack inside of a large baking sheet. When the oil is very hot and shimmering (and about 350°), add four to five mac and cheese balls. Cook until very golden all over, about 2 minutes per side. Transfer the fried bombs to a wire rack and sprinkle them with salt. Repeat with remaining mac and cheese bombs.

Transfer bombs to a serving dish and garnish with parsley. Serve warm.

servings tteokbokki (rice cakes) (about 20-25 pieces)

In a pan over medium heat, pour in enough oil to cover the surface of the pan.

If your tteokbokki/rice cakes are frozen, soak it in hot water for 5 minutes. If it&#39;s not frozen, you can proceed with the next step.

Once hot enough, add the tteokbokki/rice cakes and leave it to cook until the bottom turns golden brown. Flip/stir occasionally until both sides turn golden brown (about 10 minutes).

Add all the ingredients for the sauce in a bowl and mix well. Add more water if you want a looser sauce.

Transfer the tteokbokki/rice cakes to a serving plate and drizzle the sauce on top or serve on the side. Add more chili oil on top and garnish with green onions and sesame seeds. Enjoy!

Preheat oven to 400 degrees. Line baking sheet with parchment paper.

Move drained chickpeas to a clean kitchen towel, and blot dry. (Wet chickpeas don&#39;t roast as nicely as dry.)

Put chickpeas on the parchment paper covered baking sheet. Toss them with extra virgin olive oil, nutritional yeast flakes, and salt.  Spread the chickpeas across the baking sheet, making sure they aren&#39;t touching.

Put baking sheet in the oven and roast chickpeas for 20 minutes, stopping once or twice to shake the pan so that the chickpeas roast evenly. If you&#39;d like them to be browner &amp; crispier, continue cooking for 5 to 10 more minutes until they reach your desired level of crispiness.

Remove from oven and serve.

First heat a pan over med-high heat and add in your uncooked quinoa. Toast is for about 5 minutes until the quinoa starts to pop like pop corn. Once it is golden promptly remove it from the heat and transfer it into a medium sized bowl.

In a large wok, add 4 cups of salt. Turn the heat to medium-high, and stir till the salt is warm.

Once warm, rinse the peanuts, drain, and add the peanuts to the heated salt.
