Add the onions to the crock pot. Drizzle the olive oil over them evenly then sprinkle with oregano. Stir gently to mix. Carefully pour the water in the bottom of the crock pot (trying not to wash off the oregano). Sprinkle with salt and pepper as desired. Cover the crock pot and cook on low for 5-6 hours or until the onions are soft. Adjust seasoning as needed and add hot sauce to taste.
