Step 1
Split the English muffin and butter both cut sides generously. Toast in a skillet over medium heat until golden brown and crispy, about 2-3 minutes. Set aside and keep warm.
Step 2
Crack eggs into a bowl and beat well with a fork until completely combined. Season with a pinch of salt and freshly ground black pepper. Heat a small nonstick skillet over medium-low heat and add 1 tablespoon butter.
Step 3
Once butter is melted and bubbling subsides, pour in the beaten eggs. Using a rubber spatula, gently stir the eggs in circular motions, creating soft curds. Continue stirring until eggs are mostly set but still slightly wet on top, about 2-3 minutes.
Step 4
Stop stirring and use your spatula to fold one-third of the egg over toward the center. Fold the opposite third on top, creating a rectangular shape that will fit perfectly on your English muffin. Place one slice of cheese on top of the folded eggs.
Step 5
Place the second slice of cheese on the bottom half of the toasted English muffin. Transfer the folded egg with melted cheese on top of the bottom English muffin half.
Step 6
If desired, add a few drops of hot sauce and a light drizzle of honey. Top with the remaining English muffin half and press gently to compress slightly.
