Step 1
Season the chicken: Pat chicken dry, rub with olive oil and Mingle’s Peri Peri seasoning.
Step 2
Pan-fry: Heat a large oven-safe pan over medium-high heat. Place chicken thighs skin-side down and cook for 3-4 minutes until the skin is crispy and golden.
Step 3
Bake: Flip the chicken thighs, then transfer the pan to the preheated oven. Bake for 20-25 minutes or until cooked through.
Step 4
Serve: Rest for a few minutes, then serve with lemon wedges if desired. Serve with salad, chips, or your favourite sides!
