Step 1

In a mixing bowl with a paddle attachment, add Greek yogurt.

Step 2

In a separate bowl, combine half the sugar with yeast and warm water. Let it sit for 5 minutes until it becomes frothy/bubbly.

Step 3

In a stockpot, add butter, the rest of the sugar, salt, and milk. Scald the milk mixture until it starts bubbling on the sides (do not boil). Set aside to cool partially.

Step 4

Add the yeast mixture to the mixing bowl with yogurt, then pour in the milk mixture.

Step 5

Gradually add 1 cup of flour at a time to the mixing bowl, mixing on low speed. Once all the flour is incorporated, mix for an additional 3 minutes.

Step 6

Remove the dough from the mixing bowl and place it on a lightly floured surface. Gently roll it out to approximately 9x12 inches.

Step 7

Spread the pistachio cream evenly over the rolled-out dough. Roll up the dough and cut it into 9 slices.

Step 8

Butter a 10x10-inch baking dish and place the rolls in it. Cover the dish with plastic wrap and a towel.

Step 9

Preheat your oven to 110 degrees Fahrenheit. Place the baking dish on top of a towel on the preheated Bakehouse Mat and let the rolls rise until they're 1 1/2 times their original size, approximately 1 hour.

Step 10

Once risen, bake the rolls at 350 degrees Fahrenheit for 30 minutes or until golden brown.

Step 11

While the rolls are baking, prepare the glaze by mixing powdered sugar, milk, and vanilla extract in a bowl.

Step 12

Once the rolls are done baking, let them cool slightly, then drizzle the glaze over the top.
