Step 1

Place the extra coconut into a bowl and set aside until needed.

Step 2

Remove the pits from the Medjool Dates and place them into a Food Processor.

Step 3

Add the remaining ingredients and blitz until the mixture starts to 'clump' together.

Step 4

Use a teaspoon to scoop up the mixture and squeeze it together before rolling into balls.

Step 5

Roll the balls in the extra coconut and place onto a tray/or into a container

Step 6

Place the balls into the fridge to firm up and chill.

Step 7

Place the extra coconut into a bowl and set aside until needed.
