Step 1
Defrost your raspberry.In a small pan, mix the sugar and the orange juice or alcoholic orange liqueur. Bring to a gentle boil and simmer for one minute until the sugar is fully dissolved.
Step 2
Add the sugary mixture over the raspberries and whiz until you get a perfectly smooth raspberry mixture. I recommend that you whiz at full speed for a few minutes to ensure there are no lumps of raspberry left.
Step 3
Put the raspberry puree through a fine-mesh strainer over a bowl. You can press it through using a spoon to make sure it all goes through. This bit is a little time consuming but it's well worth it! The idea is to separate the liquid from the raspberry seeds. Discard the leftover seeds. Store the raspberry coulis in the fridge. Enjoy.
