Easy Raspberry Coulis

Combine sugar and water (or orange juice) in a 1 cup (or larger) microwave-safe cup or bowl. Stir to combine. The mixture will be very thick.

Cook in the microwave on high power for two minutes. Stir for 5-10 seconds to ensure that the sugar crystals are dissolved.

Combine frozen raspberries and hot syrup in a blender container. Blend until the mixture is smooth and pureed.

Pour puree through a fine-mesh strainer set over a medium-size bowl. Stir and push on the solids with the back of a rubber spatula until all of the liquid has been extracted. This will take several minutes as the mixture will be thick.

Discard the seeds. Add the liqueur, if using and stir to combine.

Store in the refrigerator for 5-7 days or in the freezer for 2-3 months.

Quick and Easy Raspberry Coulis

tbsp orange juice (or Cointreau if you want it boozy)

In a small pan, mix the sugar and the orange juice or alcoholic orange liqueur. Bring to a gentle boil and simmer for one minute until the sugar is fully dissolved.

Add the sugary mixture

Add the sugary mixture over the raspberries and whiz until you get a perfectly smooth raspberry mixture. I recommend that you whiz at full speed for a few minutes to ensure there are no lumps of raspberry left. 

Put the raspberry puree

Put the raspberry puree through a fine-mesh strainer over a bowl. You can press it through using a spoon to make sure it all goes through. This bit is a little time consuming but it's well worth it! The idea is to separate the liquid from the raspberry seeds. Discard the leftover seeds. Store the raspberry coulis in the fridge. Enjoy.
