Preheat oven to 200C/180C fan-forced. Line a large baking tray with sides with baking paper.

Cut each capsicum piece in half. Place capsicum, tomato, eggplant and zucchini on prepared tray. Drizzle with oil and white balsamic. Toss to combine. Roast for 20 minutes. Sprinkle with garlic, fetta and half the oregano sprigs. Season with salt and pepper. Roast for a further 10 minutes or until vegetables are tender. Serve topped with remaining oregano.
