Step 1

Rub one tablespoon sesame oil into flank steak. Heat large sauté pan over medium high heat. Sear steak 3 minutes per side to desired doneness (130° F internal temperature for medium rare); remove from pan.

Step 2

Add shallot, garlic, ginger, jalapeño, bok choy and mushrooms; sauté 3-5 minutes until bok choy is translucent.

Step 3

Stir in soy sauce, honey, Sriracha, crushed red pepper and eggs. Cook 3 minutes over low heat, stirring occasionally until eggs are cooked through Stir in noodles and remaining tablespoon of sesame oil.

Step 4

Slice steak across the grain into thin slices. Serve with noodle and vegetable mixture, garnished with scallions and sesame seeds.
