Step 1
Preheat the oven to 200°C/180°C Fan/Gas mark 6 and line a baking tray.
Step 2
Add the peanut butter and butter to a large bowl, cream together until fully combined and smooth
Step 3
Add the egg and mix well and then the grated cheese, mix through. Now add the flour, cayenne pepper & salt into the mixture and combine to form a dough. Divide the dough in half and wrap each in cling film and place in the fridge for at least 20 minutes or until needed.
Step 4
Roll the dough out on a floured surface to ½ cm thickness and cut into circles using a 5cm biscuit cutter.Transfer the biscuits to the baking tray and place in the oven for 10-12 minutes or until lightly golden and then transfer to a wire rack to cool completely and become crisp.
Step 5
Serve with cheese, festive chutneys or they taste just as good on their own. Enjoy!
