Apparently, this magical ball of chocolate ice cream, with its little surprise inside, was invented in the town of Pizzo in Abruzzo in 1943, but it has long been associated with Roman cafes such as Tre Scalini. This is a cheat's version using great chocolate ice cream and glace cherries.

Baking seems to intensify the mellow flavours of the apples, figs and pears that create this wonderful dessert. Serve with with grilled panettone for a flavoursome delight.

Banana and passionfruit is a match made in heaven, especially in a tangy, golden soufflé that isn’t scary to make at all.

(110 grams) caster sugar, plus extra to sprinkle

4-5 passionfruit (to give 100 milliliters pulp)

This homemade cheese will add interesting flavour-filled twist to your more traditional cheese board. You can refrigerate it in an airtight container for up to 5 days.

Preheat the oven to 200°C/180°C Fan/Gas mark 6 and line a baking tray.

Add the peanut butter and butter to a large bowl, cream together until fully combined and smooth

Add the egg and mix well and then the grated cheese, mix through.  Now add the flour, cayenne pepper & salt into the mixture and combine to form a dough.  Divide the dough in half and wrap each in cling film and place in the fridge for at least 20 minutes or until needed.

Roll the dough out on a floured surface to ½ cm thickness and cut into circles using a 5cm biscuit cutter.
Transfer the biscuits to the baking tray and place in the oven for 10-12 minutes or until lightly golden and then transfer to a wire rack to cool completely and become crisp.

Serve with cheese, festive chutneys or they taste just as good on their own.  Enjoy!

Espresso martini meets cake! With Choc Ripple biscuits and coffee-flavoured liqueur, this recipe is a perfect after-dinner treat (for adult's only).

20.00 gm boiling water

40.00 ml Instant Coffee Powder

(3/4 cup) coffee-flavoured liqueur

thickened cream

(1 cup) icing sugar mixture

1.25 gm ground cinnamon

Step 1

Place the water in a heatproof bowl. Add the coffee and stir to combine. Set aside to cool slightly then stir in the liqueur.

Step 2

Use electric beaters to beat the cream, icing sugar and cinnamon in a large bowl until firm peaks form.

Step 3

Line a baking tray with baking paper. Place 6 biscuits on the prepared tray. Brush with some of the coffee mixture. Top each with 1 tablespoonful of the cream mixture and another biscuit. Continue stacking 2 more times, brushing with the coffee mixture and topping with the cream mixture, finishing with a biscuit. Spread the remaining cream mixture over the sides and top of each biscuit stack to cover. Place in the fridge for 6 hours.

Step 4

Just before serving, decorate the biscuit stacks with chocolate-coated coffee beans and chocolate curls.

Traditional Cannoli are a staple of Sicilian cuisine and have been enjoyed for generations. The crispy shell holds a creamy ricotta cheese filling that makes cannoli special. With this recipe, you can make the best Sicilian ricotta cannoli filling and create this delicious and authentic Italian dessert at home.

The Best Sicilian Ricotta Cannoli Filling

ricotta cheese (drained (see note))

mascarpone cheese

sugar

cinnamon

vanilla extract

cannoli shells or 24 mini cannoli shells

pistachios chocolate chips

Add the ricotta, mascarpone and powdered sugar to a medium bowl.

Use an electric mixer to beat until combined - it will be a bit crumbly. Add the cinnamon and vanilla, then continue mixing for 3-4 minutes, scraping down the sides every so often, until whipped and smooth.

Use a rubber spatula to transfer the mixture to a pastry bag or zip-top bag and refrigerate until ready to fill your cannoli shells.

Snip off the tip from the end of the pastry bag, then carefully fill up each cannoli shell by piping the filling into one half at a time.

Dip each half of the exposed cannoli filling into chopped pistachios or chocolate chips. Serve immediately.

This is such a simple, yet absolutely satisfying dessert that the fam totally enjoyed.  I followed the recipe for the filling to the T. The filling had just the right amount of sweetness and the addition of cinnamon and vanilla was a winning touch. Shells "imported" from an Italian market in Brooklyn (couldn't find locally) completed this wonderful treat.
