Step 1

To your slow cooker, add onion, carrots, celery, garlic, chicken, rice, thyme, dried parsley, bay leaf, and chicken broth.

Step 2

Season with salt and pepper and cook until rice is tender, 3 hours on high or 6 hours on low.

Remove chicken and shred or chop. Return to slow cooker and stir to combine.
