Trim chicken of unwanted fat, rinse and drain well.

In a pot over medium heat, heat oil. Add onions, ginger and garlic. Cook, stirring regularly, until softened and aromatic.

Add chicken and cook, stirring constantly, until lightly browned and have rendered juices. Add fish sauce and continue to cook for around 1 to 2 minutes.

Add rice and cook, stirring regularly, for about 1 to 2 minutes or until rice starts to lightly brown.

Add water and bring to a boil, skimming scum that floats on top.

Add bouillon cubes and stir to dissolve.

Lower heat, cover and simmer, stirring occasionally, until the rice has softened and expanded and the congee has thickened to desired consistency.

Season with salt and pepper to taste.

Ladle into serving bowls. Top with boiled egg, green onions, and toasted garlic. Serve hot with calamansi and additional fish sauce on the side.

How to Make Filipino Chicken Congee

Ingredients:

1 (3 to 4 pounds) whole chicken, cut into serving pieces
1 tablespoon canola oil
1 onion, peeled and chopped
3 cloves garlic, peeled and minced
4 tablespoons fresh ginger, peeled and minced
2 tablespoons fish sauce
1 cup uncooked rice
6 cups water
2 bouillon cubes
salt and pepper to taste

For the Toppings
3 hardboiled eggs, peeled and halved
1/4 cup fried garlic bits
1/4 cup green onions, chopped
calamansi or lemon, cut into wedges
fish sauce

For the Fried Garlic Bits
1/2 cup oil
1 head garlic, cut into wedges

The easiest homemade Creamy Chicken and Wild Rice Soup. Filled with chicken, vegetables, rice, and a touch of cream, this flavorful soup is ready in 30 minutes.

Easy Creamy Chicken and Wild Rice Soup

butter

celery (approx 2 stalks)

carrots (approx 2-3 carrots)

leek yellow onion))

all purpose flour

chicken broth

peas

chicken

bay leaf

poultry seasoning

heavy cream (or more if desired)

Salt and pepper (to taste)

In a large saucepan over medium heat, melt 2 tablespoons butter or oil. Once melted, add celery, carrots, and leek/onion. Saute, stirring frequently, until the vegetables begin to soften, 5-7 minutes. Stir in another tablespoon of butter or olive oil then sprinkle in the flour and stir until well combined.&nbsp;

Add the chicken broth, peas, chicken, and rice, bay leaf and poutltry seasoning, stirring to combine. Raise the heat and bring to a boil. Reduce heat and simmer for 10-15 minutes, stirring frequently, until the vegetables are tender. Stir in cream.&nbsp;

Add water to thin out the soup to your desired consistency. My family prefers thick soup so I only added 1/2 cup water. Add salt and pepper to taste.

I don't think I'm ever going back to chicken noodle.

Slow Cooker Chicken Rice Soup

white onion, chopped

carrots,

celery,

chicken breasts

white rice

thyme

parsley

salt and black pepper,

Fresh parsley, finely chopped (optional)

To your slow cooker, add onion, carrots, celery, garlic, chicken, rice, thyme, dried parsley, bay leaf, and chicken broth.

Season with salt and pepper and cook until rice is tender, 3 hours on high or 6 hours on low.

Remove chicken and shred or chop. Return to slow cooker and stir to combine.

Adjust seasoning as needed and serve with fresh parsley, if desired. Enjoy!

Chicken and Rice Soup Recipe

Preheat a dutch oven or soup pot with oil over medium heat, add in onion, carrots, and celery, and saute until lightly softened and golden, about 6-7 minutes.

Add chicken, rice, bay leaves, chicken broth, water, salt, and pepper. Bring it to a boil, skimming off any foam that rises to the top. Reduce heat to medium-low and cook uncovered at a light boil for 25-30 minutes, or until rice is tender and chicken is cooked through.*

Remove chicken from the soup, shred it into small pieces and add it back to the soup then remove from heat.

Add herbs, season to taste if needed, and serve.

Easy Chicken and Rice Soup has simple ingredients, but it’s so comforting and hearty. It is quick and easy, loaded with fresh vegetables and rice, making it a great weeknight meal. 

Easy Chicken and Rice Soup

Yukon gold potatoes,

chicken base

arborio rice (- uncooked)

coriander

grapeseed oil

(12.5 oz) can chicken breast

In a large pot or dutch oven (4-6 qt), over medium-high heat, bring 8 cups cold water to a boil. Then add cubed potatoes, sliced carrots, 1 bay leaf, 1 teaspoon chicken base and whole onion. Bring back to a boil and cook for 4-5 minutes.

Rinse 1/4 cup uncooked arborio rice. Add rice and 1/4 tsp ground coriander to the pot with soup. Keep cooking for 10-15 minutes until potatoes and carrots are tender.

Meanwhile, in a small skillet over medium/high heat, add 2 tablespoons oil and rinsed in cold water canned chicken. Season with salt and ground pepper (pinch-two of each). Brown chicken for few minutes.

Remove and dispose whole onion from soup, add chicken and season with salt (1-1 1/2 tsp or to taste).

Bring soup back to a boil. Remove the pot from heat and add the chopped greens. Give a gentle stir and serve. Keeping soup on hot wire or prolonged cooking once greens are added, will turn the greens into light green-yellowish color.

Melt the butter in a large pot over medium heat. Add the onion, carrots and celery to the pot and cook for 4-5 minutes or until softened.

Add the garlic to the pot and cook for 30 seconds.

Add the chicken, Italian seasoning, salt, pepper and chicken broth. Bring to a simmer.

Cook for 10-15 minutes or until vegetables are tender.

Stir in the rice. Cook for 5 minutes. Sprinkle with parsley, then serve.

Add 1 tablespoon sesame oil to a large dutch oven or pot and place over medium high heat. Add in the green onion, carrots, ginger and turmeric; saute for 3-5 minutes. During the last 30 seconds-1 minute of cooking, add in the garlic and saute until fragrant. Slowly add in the chicken broth, coconut milk, soy sauce and red chili paste until well combined. Add in the chicken thighs, brown rice and stir, making sure the chicken is covered with the broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, stirring occasionally so the rice doesn’t stick to the bottom of the pan at any point.

After 25-30 minutes, use a slotted spoon to remove chicken from the pot and transfer to a cutting board, but keep the heat in the pot as the rice will need to continue cooking. Use two forks to shred chicken then add back to the pot. If you like a brothier soup, now is the time to add more chicken broth. Cover soup with lid, continuing to simmer on low for 10-15 minutes until rice is tender. Finally to finish, add fish sauce and lime juice and simmer for just a few more minutes. Taste and adjust seasonings as necessary.

Pour into bowls, then garnish with a little of each of the following: scallions, cilantro, mint, basil and peanuts. Serves 4-6. Enjoy.

Chicken Avgolemono Soup Recipe

olive oil

Season the chicken breasts with salt and pepper and set aside. Into a large stock pot add olive oil and turn to medium-high heat.  Add the chicken breasts and sear, 2 minutes per side, then remove to a bowl or plate.

Turn the heat to medium and add the chopped onion. Cook 3-4 minutes until softened. Add the minced garlic and cook 1-2 minutes until fragrant.

Stir in the chicken stock paste and bay leaf. Then, add the water and stir to combine. Bring to a boil, once simmering add the chicken breasts (along with any juices) and the rice. Stir and then keep at a simmer at medium-low heat with the lid mostly on the pot and cook for 15-20 minutes or until the chicken breasts and rice are cooked.

Once the chicken breasts and rice are cooked, turn the heat off and remove the chicken breasts to a cutting board. Leave the lid on the pot to keep the soup warm and use two forks to shred the chicken. Stir the shredded chicken back into the soup along with the fresh dill.

Remove the soup pot from the heat completely. Scoop out 1 cup of stock into a measuring cup and set aside (try to scoop out just the liquid stock).

Make the avgolemono: Separate the egg whites and egg yolks into two separate bowls. Whisk the egg whites vigorously until they develop a foamy consistency on top. Gradually add egg yolks to the egg whites and continue to whisk to combine. Keep whisking and gradually pour in the lemon juice until combined.  Slowly pour the 1 cup of stock into the egg mixture, whisking constantly to combine.

Add the egg mixture into the pot of soup, constantly stirring until combined.  Taste and adjust seasong with salt and pepper, a big pinch of each if desired!  Serve in bowls topped with fresh dill, pinch of salt and pepper and drizzle of olive oil.

Oh my goodness, this soup was perfect. My husband and grown up children loved it , as did my in-laws  that I cook for. My father in law had to go into hospital and the food left a lot to be desired. I took him a flask of this everyday when I visited him , and he wolfed it down . Its his favourite, i make it every week for easy lunches for work and we haven't gotten fed up of it yet, and i cant wait until autumn when its soup weather again , to make it again . All of your recipes, that I have tried have been so flavourful and wonderful that you are my go to. Thank you so so much for all of your hard work .

I am making this for a second time since it was so good. Confession: I use Costco rotisserie chicken which I buy to make my own stock and use in this recipe. I also use short grain arborio rice since that is what I had on hand. Honestly, this is better than the last restaurant that I had this soup.

Traditional Chicken Avgolemono Soup

This Creamy Chicken and Rice Soup is a variation of a classic chicken soup recipe that can be prepared in just a few minutes on a weeknight.

Creamy Chicken and Rice Soup

chicken breast

cream of chicken soup

long grain white rice

heavy cream

yellow onion ((¼ inch pieces))

carrots ((¼ inch pieces))

celery ((¼ inch pieces))

unsalted butter

tbsp fresh chopped parsley (plus extra for garnish)

chicken bouillon seasoning

tsp kosher salt

½ tsp black pepper

In a large 10 quart stock pot, on medium high heat, saute the butter, onions, carrots, celery and garlic for 5 minutes or until the vegetables are tender.

Add the parsley, thyme, chicken bouillon, bay leaves salt, black pepper and turmeric to the sauteed vegetables and stir to coat.

Add the chicken broth, cream of chicken soup and raw chicken breasts to the pot.  Stir, cover the pot with the lid and simmer on medium low for 20 minutes.

Remove the chicken and the bay leaves from the pot. You can discard the bay leaves and place the cooked chicken onto a plate.  Bring the liquids back up to a boil, add the rice, cover the pot again and turn the heat down to low again.  Cook your rice for 20 minutes.

While your rice is cooking, shred your chicken breasts using 2 forks.  Set aside until your rice is done.

Turn off the heat and add your shredded chicken back to your pot. Add the heavy cream and stir.
