Heat the oil in a large saucepan over low heat. Add the onion, garlic, ginger, chilli and lime rind and cook, stirring, for 10 minutes or until soft and aromatic.

Add the turmeric, cumin, mustard and tomato. Cook, stirring occasionally, for 10 minutes. Add the sugar and stir until dissolved. Add the vinegar, banana and coconut. Simmer, stirring occasionally, for 30 minutes or until thickened.
Step 3
Stir in the lime juice, salt and coriander. Divide among sterilised jars. Seal.
